Tuesday’s tend to be a just another day in the week so I thought I’d spice it up a bit by adding a bit of taste. So, welcome to Tasty Tuesday, a day when I can share a recipe.
Everyone who knows me well knows that I love chocolate. Today’s recipe lets me indulge while staying away from lactose products.
The G- Man’s Chocolate Chip Oatmeal Cookies
Mix in a large boil:
1 cup of shortening, plus 2 tbsp. of water (or use 1 cup of margarine – no water)
3/4 c. brown sugar
3/4 c. white sugar
2 eggs
Add: 1 tsp. baking soda and 2 cups of flour, one at a time. Mix well.
Add 2 cups of oatmeal, one at a time. Mix well.
Stir in 1 cup (or more if you like) chocolate chips.
Drop by the teaspoon on greased cookie sheets. (In our house, we use Pam – no dairy, fewer calories, less mess).
Bake in a preheated oven for approximately 12 minutes (when golden brown). This makes about 36 cookies.
I really like these because I can eat one 2 or 3 hours before a run without it upsetting my stomach. Not too many foods can claim that!
We made these last night and took over a plate to our neighbour, who always comes to the rescue when we’re half-way through a recipe and realize we’re missing an ingredient; last night, we ran out of oatmeal. Thanks, J!
